This is our thurd collaboration with Kanpai London Craft Sake. This 5.0% rice lager is brewed using rice & super pale malted barley, with Dr. Rudi & Sorachi Ace hops, then fermented with a clean lager yeast.
The Kasu used in this brew was the lees from brewing Kanpai’s Sumi Sake, whereby it was added half way through fermentation which assisted in adding complexity through imparting very unique estery notes.
“Ichi-go Ichi-e” is a Japanese idiom describing the treasuring of an unrepeatable nature of a moment, or loosely translated as a ‘once in a lifetime’ occurrence. We felt this was very apt for such a special collaboration.
Currently only available in 30L kegs and 440ml cans.
